There is no way to easily schedule a broken appointment or see what the procedures are from the More Information view. You have to go to a date, attempt to schedule the patient, click yes to see unscheduled appointments to pull it up. For non unscheduled appointments, it will open up the same UI directly from the More Information screen, and provide a treatment description within More Information.
Double clicking on the appointment should simply grab the APPID and launch the appointment settings UI.
